Sick Day Noodle Soup

Onion
Chicken Stock
Egg Noodles
Sweet corn
Ginger
Chilli Flakes
Soy Sauce
Coriander Leaf

When I’m not feeling well, I love to make some yummy noodle soup and this one is super easy. First I fry up an onion and some chicken in a little ground nut oil. Then I throw in about a pint of chicken stock and some noodles. In goes some soy sauce, some coriander leaf and ground ginger (so lazy). I like a little sprinkle of chilli powder or half a fresh chilli to clear my nose. Finally I throw in a hand full of frozen sweet corn and wait for the noodles to be soft. Then chow down.
What I love about this recipe is most of the ingredients are stuff I have in all the time so I know I can have soup whenever I don’t feel well.

Cosy Slippers

We’ve had some wet weather recently in Dublin. There’s nothing better than getting home, peeling off wet socks and putting on a nice cozy pair of slippers. I picked these up from Penney’s during the winter, but similar pairs are still available. I recommend picking up a pair, because the Irish weather isn’t getting better any time soon!
